Enchaladas, Italian chicken with cheese, slow cooked prok chops in mushroom soup sauce & twice cooked baked potatoes with cheese n bacon!!!!

I have a full freezer!! YUM!!!!

Roger's Spicey Kale.

200g Chopped Kale.
1 large Onion.
2 Fresh Chillies.
2 Cloves of Garlic.
Chopped Mushrooms. (as many or few as you like.)
1 Large Red Pepper.
1 Tablepoon Virgin Olive Oil.

Pour the olive oil into a large frying pan or wok and heat. Chop the onion, chillies, garlic and pepper and fry in oil until soft. Add the mushrooms, cook for 5 minutes.
Add the kale and ( this is important ! ) KEEP STIRRING or FOLDING the kale while it cooks. Do this for about 5-10 minutes, depending on how you like your Kale cooked ( Al Dente or Soft ). Can be served as a side dish or main meal.
If you don't like or can't get Kale, White or Red Cabbage can be used to just as good effect. Spinach can also be used but use twice as much and halve the cooking time.
